
It’s getting warmer outside and this is one of my favorite salads to make for the warmer seasons. It’s perfect with seasonal fruit and can be paired with any protein of your choosing. I use a simple dressing on it that puts it over the top. Let’s get into it!
For the salad:
- Spring mix or lettuce of your preference
- Prosciutto
- Burrata
- Peaches/Pears/whatever fruit is in season
- Pecans
For the dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
Instructions: Wash the lettuce and divide into however many servings you want onto plates. Next, start with the dressing. Start with the olive oil, then add the rest of ingredients. Mix it up well and taste it to adjust anything accordingly. Sometimes it needs a little more salt than you might think. Dice up whatever fruit you’re using into bite size pieces and place a handful onto each salad. I recommend peaches for the summer and red pears for spring or winter. Sprinkle a handful of pecans onto each salad. As for the prosciutto, tear it up into bite size pieces. Add as much as you’d like, but I typically do one big slice torn up per salad. Heat up a skillet at medium-low heat and put the prosciutto in there. Prosciutto is very fatty and doesn’t need any oil for the pan. It will smell fragrant like bacon after a minute or two. Start slowly moving it around the pan so it doesn’t stick. It should get crispy after 5-6 minutes. While you’re waiting for it to crisp up, take the burrata out of the package and pat them dry with a paper towel. I will look for any reason to eat burrata. It’s my favorite and can be used in a million ways. Place it on a cutting board and dice each ball into quarters. It’s a little messy due to the cottage cheese like texture on the inside, but you can scoop that onto the salads if it tries to make the great escape. Place 2-3 pieces of burrata on each salad and top each one with 5-6 pieces of crispy prosciutto. Drizzle the dressing on top and there you have it. This is super simple to make and makes a great crowd pleaser for a dinner party or a summer barbecue with your family. Let me know if you try it out!
