We are a little over a month into Spring, and I’m crossing my fingers that the April showers will bring us May flowers. Translation: I’ve had it with the rain. This week’s edition is a fun summer cocktail that’s perfect for the warmer months! It’s called a Dominican Sneak Up. I had one in Disney World at the Swan and the Dolphin Resort. I also fell in love with the bartender that served it to me in under 30 minutes to top it all off. Hope he’s doing great.

Here’s what you’ll need.

  • Rum, preferably Brugal Viejo. It’s a Dominican rum that was used in this cocktail at Disney.
  • Lemonade, if you’re lazy like me and don’t want to make it fresh, store bought is fine. Channel your inner Barefoot Contessa.
  • A few fresh mint leaves

Add some ice, 2oz of the rum, and 6oz of lemonade into a cocktail shaker. Shake it up, and pour into a glass over ice. Tear off 2 fresh mint leaves, stack them on top of each other, and fold them in half. Press down gently on them with the flat side of a kitchen knife to get a little extra flavor. You can even dice them up if you’d like. Add them into the cocktail and stir. Add a garnish of fresh lemon if so desired. That’s it. It’s that easy. This is a super fun and easy cocktail for summer that’s perfect for your next garden party or happy hour on your back deck!
